More balanced docs about NFS etc (#85060)
Today we don't really say anything about the requirements for the data
path in terms of correctness, and we specifically say to avoid NFS for
performance reasons. This isn't wholly accurate: some NFS
implementations work just fine. This commit documents a more balanced
position on local vs remote storage.

Asciidoctor prefers the `[discrete]` tag for floating headings:

Clarify the resiliency trade-off of disabling replicas to speed up indexing. (#52714)
We should be more explicit about the downsides of disabling replicas and
explain that users should be ready to re-do the entire load in case of
issues mid-way.

One architecture that we have recommended to several users to speed up
indexing involved using CCR to prevent searching from stealing resources
from indexing.

fbad3af352 Add a how-to section to the docs. #18998
This moves the "Performance Considerations for Elasticsearch Indexing" blog post
to the reference guide and adds similar recommendations for tuning disk usage
and search speed.
