[Synthtrace] Custom logs with ECS fields (#190502)

closes [3758](https://github.com/elastic/observability-dev/issues/3758)

## 📝  Summary

This PR adds more ECS field support to the current
[simple_logs](https://github.com/elastic/kibana/blob/main/packages/kbn-apm-synthtrace/src/scenarios/simple_logs.ts)
scenario as below.
