Bump docs + release notes for 6.0.0 GA (#8656)
* Bump docs + release notes for 6.0.0 GA This has a variety of changes. I rolled up more breaking plugin changes in here. I also rolled up all 6.0 release notes and diffed them with 5.6.3. I removed release notes that only dealt with improvements across 6.0 pre-release versions * Incorporate various PR feedback * Fixed a small typo
